Description

This bar is the result of a collaboration with SACRED, a non-profit with the mission of improving the lives of small scale agave spirit producers in central Mexico. A Mexican cacao was infused, after roasting, with a mezcal from central Mexico, then re-dried and refined into finished chocolate. Resulting flavor has a pleasant acidity with mild stone fruit character, but the robust mezcalĀ  takes the spotlight with its characteristic smokiness.

The cacao is a collection of amelonados, acriollados and hybrids grown by several dozen farmers in the La Chontalpa community of Tabasco and was sourced through Origen Tierra in Mexico.

The mezcal was produced by Ildefonso Macedas Ginez in the state of Puebla, using a collection of heirloom agave varieties rather than a monoculture more typical larger mezcal producers. The mezcal was provided to Somerville Chocolate courtesy of SACRED.
